The gastronomy of Jaen is very varied; also, much of Jaen's local gastronomy uses olive oil in more generous proportions than most of the rest of Spain. The local dish, "Ajilimoje", is made with olive oil, vinegar, potatoes and red pepper and is delicious, spread on thick chunks of freshly-made bread. In the same way, the "Pipirrana" (Tomato, green peppers, crumbs of bread, top of garlic, olive oil, vinegar, salt and hard-boiled egg), "Spinach to the style Jaen" (Garlic, crouton, pepper sausage maker, laurel, egg, rind of orange and vinegar), "Rice of Jaen", "Trout from the rivers of Jaen", "Ajo Blanco of Jaen" and "Meat of Calf to the chopped garlic" are the most representative dishes of the province.

During the celebrations of the day of San Antonio Abad, seasonal delicacies are eaten,pumpkin, sweet potatoes and popcorn. Another delicious dishes are: "Rice with milk", "Gachas of Jaen", "Pestiños", "Gusanillos", "Ochíos" and so on. As far as fruit is concerned, the peaches grown in Alcaudete are famous all over Spain for their flavour.

This is a traditional and creative restaurant. Some of the best Andalusian food in the province is served here in a traditional setting. Recommended items include mushrooms in a well-flavored cream sauce served with prawns and black olives, scallops with mashed potatoes, and a tender roast sucking pig baked with potatoes, in theCastilian style.

This restaurante is situated in the center of the city, near the cathedral in the historic district. Hidden away on a narrow pedestrian street near the cathedral square, this popular restaurant is generally packed with locals. The food in Casa Vicente is traditional and creative, so It's praised locally for the quality of its tapas and its wine.

Traditional Jaen dishes are served here. Some starters are espinaca esparragada (spinach with vegetable sauce) and alcachofa natural (artichokes in garlic). In the same way, some of the main dishes are: Game casseroles, lomo de orsa mozárabe (lamb in sweet-and-sour sauce) or bacalao encebollado (salt cod sautéed with onions and sweet peppers). Two local desserts are rice pudding and manjarblanco mozárabe (Moorish-style fudge).
