Eating in Cordoba

The restaurants and tapas bars reflect a hunger for good food and good times by Cordobans and tourists alike. The best way to eat Andalusian food is "al fresco", which allows you to not only take in the rich tastes of the food but also to watch the flurry of people going about their lives. Tapas are small portions of food, usually eaten standing up with a drink in the other hand. Tapas come in different kinds: Cheese, ham, squid, among others.

The cuisine in Cordoba maintains the tradition of dishes from the different cultures which settled here. Recipes from old Arab and Jewish manuscripts have been saved. Consequently, there is a great variety of dishes, such as 'salmorejo' (cold vegetable soup), lamp with honey, 'flamenquín', cordero a la moruna, 'rabo de toro' (bull's tail), paella, among others. All of them served with regional wines. The locally produced wine is predominantly Montilla/Moriles, which is made in the towns of the same name just south of Cordoba. There are different sorts of pastries as well: 'pastel cordobés', 'suspiros de Almanzor', etc.
